Here\u2019s how you can cook it:<\/p>\n\n\n\n<p>Ingredients:<\/p>\n\n\n\n<p>500g chicken (cut into pieces)<\/p>\n\n\n\n<p>2 potatoes (peeled &amp; cut into chunks)<\/p>\n\n\n\n<p>200ml coconut milk<\/p>\n\n\n\n<p>400ml water<\/p>\n\n\n\n<p>3 tbsp cooking oil<\/p>\n\n\n\n<p>1 stalk lemongrass (bruised)<\/p>\n\n\n\n<p>2 kaffir lime leaves<\/p>\n\n\n\n<p>2 bay leaves<\/p>\n\n\n\n<p>1 cinnamon stick<\/p>\n\n\n\n<p>2 cloves<\/p>\n\n\n\n<p>2 star anise<\/p>\n\n\n\n<p>2 cardamom pods<\/p>\n\n\n\n<p>1 tsp sugar<\/p>\n\n\n\n<p>Salt to taste<\/p>\n\n\n\n<p>Spice Paste (blend into a paste):<\/p>\n\n\n\n<p>6 dried chilies (soaked &amp; deseeded)<\/p>\n\n\n\n<p>3 red chilies<\/p>\n\n\n\n<p>4 shallots<\/p>\n\n\n\n<p>3 cloves garlic<\/p>\n\n\n\n<p>1 inch ginger<\/p>\n\n\n\n<p>1 inch galangal<\/p>\n\n\n\n<p>1 tbsp curry powder<\/p>\n\n\n\n<p>1 tsp turmeric powder<\/p>\n\n\n\n<p>1 tsp coriander powder<\/p>\n\n\n\n<p>1 tsp cumin powder<\/p>\n\n\n\n<p>Instructions:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Saut\u00e9 the spices<br>Heat oil in a wok or pot, then fry the cinnamon, cloves, star anise, cardamom, lemongrass, kaffir lime leaves, and bay leaves until fragrant.<\/li>\n\n\n\n<li>Cook the spice paste<br>Add the blended spice paste and stir-fry until the oil separates and the paste turns darker in color.<\/li>\n\n\n\n<li>Add the chicken<br>Toss in the chicken pieces and stir until they are well coated with the spices.<\/li>\n\n\n\n<li>Simmer the curry<br>Pour in water and bring to a boil. Lower the heat and let it simmer for about 15 minutes.<\/li>\n\n\n\n<li>Add potatoes &amp; coconut milk<br>Add the potato chunks and coconut milk, then let it simmer until the potatoes are soft and the chicken is fully cooked.<\/li>\n\n\n\n<li>Season the curry<br>Add sugar and salt to taste.
